Food & Fascism: Island Rice & Peas

Well, it’s been a great week for fascism in ‘Murica, hasn’t it?

Let me tell you, the hypocrisy of the Right-wing Republican Fucks had all the F words flying from my fingertips to the pages of Facebook. (Why are we on Facebook anymore, really? Why do we keep giving that horrible fart-sniffing Zuckerberg our attention and all the money he gets from our using his platforms? Not to mention Bezos and all the other billionaires who sucked up to that flea-ridden, fuck-twaddle who wants to be king, including Bill Gates, who everyone always thought was so nice. Well, you know what? He’s not. He’s profiting off the fuck-weasel’s carting people onto planes (0wned by signature Aviation, a company Gates has stock in) and flying them off to countries elsewhere. What a fucking pile of frog guts.)

Don’t even get me started on Charlie Kirk, but alas, we’ve started. The Right is trying to claim the Left is violent. The shit-pile of hypocrisy is so deep they’re eating it…and their own.

That’s all I’m going to say about that. I can’t think of any more F-words.

So, we made Sea World Seven Seas Food Festival Island Peas & Rice. The best recipe I could find that came close to the description (yellow rice, red beans, & coconut milk) was this one called Caribbean Rice and Beans from African Bites.

Because Sea World’s used yellow rice, so did we. Even though the package of yellow rice was already seasoned, I knew from experience that it was mild, so we used all the same spices called for in the recipe. But the package of rice was a bit more than 2 cups. We went ahead and added it all in with a bit more broth. In the end, we should have added even more broth and cooked it longer. As it was, we cooked it at least 15 minutes more than the recipe called for. It was just a tiny tad bit underdone.

We added peas as suggested in the recipe notes because there are obviously green peas in the title and the picture; but we just added regular old frozen peas, not the fancy ones referred to.

The recipe calls for a whole Scotch Bonnet pepper and if it weren’t for the pictures on the website, I wouldn’t have known what to do with it. It’s just added in, whole, and left in…whole. I suppose someone could eat it. But we weren’t bold enough to try.

This dish was really good. A touch of heat and a lot of flavor. Hubs added grilled chicken to the leftovers, but I just kept eating it as it was. I highly recommend the recipe.

This was the last sample from our Sea World Seven Seas Food Festival want-to-taste list. We had a great time cooking and trying every one. And we didn’t have to walk around in the heat and crowds and stuff ourselves to bursting to do it.

Now we’re starting our Epcot Food & Wine Festival list. First up, a chocolate pudding cake with bourbon caramel sauce. Just what we need during these troubling times.
